HARVEST: Grapes are manually selected, and harvested while slightly ripening. Montepulciano grapes are harvested at the end of October, while the Merlot grapes are harvested in the first days of October.
This wine is obtained from the separate wine making of two varieties of grapes. The maceration with the skins is differentiated, with the Merlot macerating for 12 days, and the Montepulciano for 16 days. The wines are poured into wooden barrels and allowed to stand until the end of malolactic fermentation. The wine is subsequently decanted and aged in wood and steel.
