The grapes are pressed and the must is clarified through the flotation. Selected yeasts are then added for about 7/9 days of temperature controlled fermentation. The second fermentation takes place in autoclave for about 90 days where the wine reaches the desired pressure.

PRODUCTION METHOD: Guyot
WINE TYPE: Sparkling sweet white – long Charmat method.
ALCOHOL CONTENT: 6.5% voI.
SERVING TEMPERATURE: 6°- 8° C
COLOUR: Straw yellow with golden reflections, perlage minute and cheerful, persistent foam.
SCENT: Especially fruity notes of orange and apple in an elegant and refined blend.
TASTE: Intense and pleasantly sweet flavor.
PREFERABLE MATCHES: It is a dessert wine, best accompanied by sweet pastries, panettone, and pies.
