PRODUCING COUNTRY: Italy | Sicily

VARIETAL: 60% Grillo 30% Chardonnay 10% Catrratto

HARVEST: Manual, the Chardonnay is done in the beginning of August, the Grillo at the end of August, and the Catarratto in mid September

WINE MAKING: Cold maceration of the skins takes place for 12 hours at 8°C, followed by pneumatic pressing, cold decanting, and fermentation at 17-18°C. At the end of the alcoholic fermentation, the wine rests with the grape skins and is stirred once a week for at least 4 monts, followed by aging in the bottle

TASTING NOTES:

Color: Straw yellow
Nose: Ample and exuberant
Flavor: Fresh and wide with excellent equivalency between acidity, seasoning, and volume

FOOD PAIRING: Excellent with fish and light calf dishes

SERVING TEMPERATURE: 8° – 9° C.

ALCOHOL CONTENT: 13,% vol
